Jicama Lime Summer Salad


Simple.  Fresh.  Pretty.  Oh and juicy.  This salad is my current go to for the season.  All the light crunchiness of the Jicama blends well with the smooth avocado and the lime juice gives it a lovely Mexican touch that goes well on it’s own, or with fish tacos.  Also?  Making it, makes you feel like a bright sunshine filled day.  I swear!

 Jicama Lime Summer Salad

  • Medium sized Jicama sliced into rough matchsticks
  • 1 medium to large Avocado cubed
  • Juice of 2 limes
  • 1 handful cilantro chopped
  • sea salt

1.  Mix all the ingredients.  Salt and lime to taste.

2.  Serve immediately

This dish will not keep well, like most salads.  The amounts here are by the eye, meaning you really can’t go wrong with any combination here, save for too much salt.  All you need is a slight sprinkling.

  1. I've yet to tangle with jicama but it sounds like a lovely veggie (or is it a fruit?). The flavors here seem great, a nice summer lunch!
