I have reviewed Flatbread Company before, when Jon and I were here last year. That was my first time there, and I loved it immensely, because as you might know, being gluten intolerant usually means a curtailing of your pizza habit. I have always found this to be a gigantic tragedy.
Now that we are back here in Maui and looking for a permanent home, we have found ourselves going back to Flatbread on more then one occasion, and this last time had a very interesting conversation with our waitress.
Flatbread offers a gluten free crust for those asking for it. Every time I have gone there, its what I ask for. Interestingly, a couple of times last year I came home not feeling all too well, as if there had been some cross contamination in the kitchen. It’s what I assumed must have happened and chalked it up to the way things were in all restaurants, as very few if any can guarantee against such a thing.
This last visit however, proved not only enlightening, but encouraging. When I ordered my Gluten Free Organic Bacon Ranch Chicken Pizza, our waitress asked me specifically if it was due to an allergy or personal taste that I was ordering gluten free. I told her it was an intolerance and then asked her why? She then went on to explain, that if it was due to an intolerance or allergy, that the pizza would be prepared differently to ensure against cross contamination! I encourage each of you, needing to go gluten free and visiting this restaurant to ask about the process.
Now here’s the thing: Why the heck didn’t I take responsibility and inquire about this before? I find that still in this day and age where more and more restaurants are becoming incredibly allergen savvy, that I still assume they won’t be or that they can’t do anything to really tend to my dietary needs. This is clearly not the case with Flatbread Company, which makes them even cooler in my book. Good pizza, made with locally sourced organic products and allergy conscious? I’d marry them if I could!
This particular meal, was amazingly tastey and I felt great afterward.

It was and it is! LOL The cocktail was a Coconut Milk Martini! Can you imagine? It was smooth, cool… as if it had melted on your tongue. It brought together two of my favorite things, a martini and coconut milk. Almost like a glorified Pina Colada, but subtle, sweet… C…o…c…o…n…u…t.

Elena, I love Food Practice. It has this elegant quality to the page. Flatbread has a wonderful energy and I’ve heard they really do care. Love also how they display which farmers they’ve bought the ingredients from that day on a chalk board. So many restaurants going Farm-to-table. We live on the most amazing island, Maui. Happy you moved here to pursue your dreams too!
