I am a creature of habit. I see this in all the ways I like to keep things the same. If I’m at a restaurant, chances are I’ll order the same thing I’ve ordered there a hundred times before. I like what I like, why change?
I suppose it’s no different with my need to make Frittata’s on Sundays. What really got me thinking about this, though, is the fact that although I will usually just use whatever veggies I have in the refrigerator that day, there are some ingredients that are musts. Despite the fact that we have a variety of cheeses, I still reach for the Cotija cheese. I love it, love the flavor and love the affect it has when baked on top. Why change? But there are so many other things to top a Frittata with, and really? Why keep using cheese over and over again. It’s certainly not necessary to the recipe.
Who knows? What I do know is that today’s Frittata was amazing. Broccoli, Zucchini, Asparagus, Chives, Red Onions, Cheese and Eggs made up this Sunday’s Frittata and all the veggies save for the red onion, came from our CSA box.
