This week Jon and I headed down to Cabo for a Mastermind retreat called CaboPress. It was our second year in attendance, and it’s held at the Fiesta Americana Resort, Los Cabos. The space is gorgeous, the light down in Baja is always breath taking and inspiring for me and we know so many of those that attend this retreat that it’s always a lot of fun.
The resort was all inclusive and we enjoyed a variety of meals all over the resort. The best part of it was really the company and the setting. I’m not very partial to resort food. I find it all very… ‘safe’ and several notches down from really good, innovative and flavorful food. Resort food caters to those that travel but don’t really want to venture out of what is comfortable and known to them. That said, most the restaurants we ate at in the resort served good food and we enjoyed ourselves.
I left wanting to recreate the shrimp in guajillo chilis I had when we ate at the Mexicana. Will have to try it out once I find where to get guajillo chilis!
Monday, November 14, 2016 – Cabo San Lucas, BC. CaboPress Crew at The Peninsula in the Fiesta Americana Resort, Los Cabos. Various tasting plates with and Asian Fusion flare. I stuck to the salad and the shrimp as the rest of it had teriyaki or soy sauce or some form of gluten on it.
Tuesday, November 15, 2016 – Cabo San Lucas, BC. CaboPress Crew at La Mexicana in the Fiesta Americana Resort, Los Cabos. Glorious shrimp in garlic, onions, white wine and guajillo chilis. It was a lovely combo with veggies, rice and a salad.
Wednesday, November 16, 2016 – Cabo San Lucas BC. The CaboPress Crew at Ruth’s Cris. I had a Petit Felit with a lobster tail and mash potatoes.
Thursday, November 17, 2016 – Cabo San Lucas BC. International Diner’s Club gathering! Karim, Sherry, Jon and I at Rosetto at Fiesta Americana Resort, Los Cabos. We all had something different, but I had a dish of gorgeous sautéed shrimp over polenta after devouring a caprese salad. We all had wine.
Friday, November 18, 2016 – Palm Desert, California. Jon and I. In & Out cheese burger protein style for me, grilled cheese for Jon while driving home from the San Diego Airport.
Saturday, November 19, 2016 – Idyllwild, California. Jon and I. Baked potato and chili with a side salad.
Sunday, November 20, 2016 – Idyllwild, California. Jon and I. We skipped dinner. Ended up going to a movie (Fantastic Beasts And Where To Find Them!) and the popcorn and soda made us meh.
