Lovely Lychee

We have been getting Lychees in our CSA box for the last month and a half now.  In truth, this is my first experience with them fresh.  I’ve had various lychee desserts or dishes on the mainland, but it was always mixed in with other ingredients, and I’m sure it wasn’t fresh.   Certainly not as fresh as these!

I’m in love with their color and the flesh inside is sweet/tart and a bit tannic like a grape. In a smoothie they lend some zip, on their own they seem a bit cooling as the days heat up. Although I haven’t tried it yet, these lovelies will likely also go well in a fruit salad with coconut, grapes, sweet mango and maybe some pineapple.

Lychee is a tropical fruit jam packed with fiber, vitamin C, niacin, thiamin, folates, potassium and copper.

    When I lived with a Vietnamese family back in the day, we used to peel them and put them in a cup full of ice and yum! They'd get really cold and the melted ice water was delish as well! Try it!

    I love fresh lychees. They make me think of eating eyeballs. Haha!
