The second I start seeing watermelons out in farmer’s markets and grocery stores, I get all gleeful and mouth watery. I think it’s one of my favorite fruits and in fact one, I do a few different things with. This salad/snack dish above is one of those things. It’s so easy and it’s great for a warm afternoon snack, for a picnic, a potluck and even dessert.
No measurements necessary. Trust me.
Watermelon Mint And Goat Cheese Salad
- Watermelon
- Goat Cheese crumbles
- Mint
1. Cut your watermelon up in cubes.
2. Chop up a good hearty handful of mint leaves.
3. Mix in a large bowl along with a good portion of the crumbled goat cheese. Chill until you’re ready to serve.
NOTE: This does not keep well. If you try to save left overs, it becomes a very unsightly mosh of cheese and melon juice. Still fine to eat, but not lovely to look at. I recommend making as much as you know will be eaten.
